Super Simple & Healthy Broccoli Soup Recipe

One of the things I'm doing as part of my new health plan is to eat a lot more fruit and vegetables. Since we started Hello Fresh in January this year, I had already increased this but now I aim to eat 150g of fruit or veg with every meal, ideally with plenty of dark green options.


Sometimes this is easy, for example when I make a salad or stir-fry, both packed with veg, but sometimes I struggle - mainly at breakfast. I like a savoury breakfast so don't go for the fruity options but I don't always fancy a pile of vegetables with my eggs, nor do I have time to chop & cook them before work.


So now I make a batch of broccoli soup for the week. It's super easy, quick to make and easy to heat up and drink with any of my meals (or I just sneak it in as a snack if I'm feeling hungry). I love broccoli so this is the perfect solution for me, especially now we're moving into autumn.

No, it's not quite the same as my latte I used to have with breakfast but it's only 67 calories, very filling, full of goodness and really quite delicious!


Broccoli Soup

Serves 6

(67 calories)


Ingredients:

3 x broccoli (around 900g), chopped

2.2 litres stock (I use chicken stock)

2 cloves of garlic, crushed

1 tsp turmeric powder

pinch of chilli flakes

salt & pepper to taste

Sunflower seeds & extra pepper to garnish (optional - not included in calories)

Method:

Bring the stock to a boil, add all the ingredients and simmer for around 8 minutes until the broccoli is tender.


Remove from the heat and blend until smooth. Taste and add more seasoning if required.


Portion into tubs/bottles - around 500ml each.
