Spicy Cowboy Beans - A Healthy Breakfast Recipe

I pretty much always have eggs for breakfast but sometimes I fancy something different. This is a great healthy recipe for getting some extra vitamins in too!

Serves 2

178 calories


Ingredients:

1 tsp oil

1 tsp clove garlic, chopped

1 tsp paprika

1 tin chopped tomatoes

1.5 tsp Worcester sauce

1 tsp tomato puree

1 tsp Dijon mustard

1 tsp Frank's red hot sauce (add more if you prefer it more spicy)

1 tin cannellini beans (washed & drained)


Optional additions per portion:

1 egg (+70 calories)

3 x Heck chicken sausages, cooked and chopped into bite sized pieces (+90 calories)

Slice of sourdough toast to serve (+100 calories)


Method:

  1. Heat the oil in a small pan and add the garlic and paprika, cook for 1-2 minutes then add the tomatoes, Worcester sauce, tomato puree, mustard and hot sauce.

  2. Bring to the boil and simmer until thickened.

  3. Add the beans and warm through.


Optional: serve with 3 chopped Heck Italian chicken sausages mixed in and a poached egg on top (338 calories in total). I fried my egg as I'm rubbish at poaching.

Add a slice of sourdough toast to dunk in if you want more carbs (+100).
