Easy & Healthy Smoked Salmon Pâté Recipe

This salmon pâté is an old favourite, I think I found it in a festive magazine back when we lived in Glasgow and I used to make it ALL the time, it always goes down well when we had guests and is SO quick and easy to make!



It's pretty healthy too so I recently made some for a nice treat dinner that was still on plan for me!


Serves 4 as part of a meal (210 calories) or 8 as an appetiser, part of a buffet or snack (105 calories). It's great for parties as you can make it in advance!


Ingredients:

350g hot smoked salmon fillets, skins removed

2 tbsp horseradish sauce

50ml reduced fat crème fraîche

zest & juice of 1-2 lemons

1 tbsp capers

1 tbsp chives, chopped

salt & pepper, to taste


Method:

Place the salmon, crème fraîche, horseradish and zest & juice of 1 lemon in a food processor. Season with salt & pepper and blitz until you have a rough paste. Don't go too far as you want to keep some texture to the salmon, it only takes a few seconds.


Taste and add more lemon juice and/or horseradish and seasoning if you feel it needs it. I like mine to be zingy so usually use 2 lemons.


Stir in the chopped chives and capers and serve with crusty bread or toasted sourdough. I add a salad if I'm having it as a meal. It's also delicious on toast for breakfast with an egg on top!
